Good Morning Mug Muffins

Mornings can be crazy, and with school back in session for kids, or college students, breakfast can be stressful. A lot of people end up turning to sugary cereal, oatmeal or toast. Luckily there are better options that can be equally as quick! If you are someone who can’t stand eggs, these muffins will be a great option for mornings when you’re in a rush and want something reminiscent of toast. You can top them with butter, jam, almond butter or even avocado.

Ingredients:

1 egg
1/4 cup almond flour
1/4 cup flax seed meal
1 tablespoon butter or ghee (coconut oil for vegans)
1/2 teaspoon baking powder
1 tsp maple syrup

Method:
Add butter or ghee to mug and melt it in the microwave
Once that’s melted, crack the egg into the mug and whisk it in with the butter
Add the baking soda and whisk well until it is all smooth
Add almond flour and flax seed meal and mix until combined
Lastly add the maple syrup and mix it up!

Once it is all mixed, pop the mug in the microwave for 1.5-2 minutes.

The muffin will rise and then fall a little bit. When it’s done you can dig in and eat it or take it out of the mug, cut in half and spread your toppings on it.
