Have a cookie dough obsession? So does my boyfriend… So I had to find a way to make cookie dough semi-healthy. Here’s what I came up with, my guy approves so they must be pretty good 😉
3 cups raw cashews (or substitute almond flour or convenience)
1 stick (8 tbsp) butter – it’s important to buy organic/grass fed butter for the health benefits and also the exclusion of growth hormones and antibiotics
1 tablespoon coconut oil
1/4 cup coconut flour
1/4 cup honey or maple syrup depending on the flavor you want
1/2 teaspoon sea salt
1/2 teaspoon vanilla extract
Chocolate chips to your liking
Blend the cashews in a food processor or blender, I used a nutribullet and it’s not perfect, but it works.
Add melted coconut oil to the blender and let the mix get thick and flour-like
Melt butter and honey/maple syrup and mix into the dry ingredients with a mixer or some muscles, I used muscle.
Add the coconut flour, salt, and vanilla
Let the mix sit in the fridge or freezer until cool so the chocolate chips don’t melt
Add chocolate chips!
Form into balls with your hands
Eat them guilt free because cashews are good for you and everyone needs a little chocolate now and then!
