Paleo “Pazookie”

Sooo if anyone has ever been to BJs, you know they make these amazing cookie cakes, called Pazookies. I crave these things all the time. I actually crave cookies and ice cream all the time, but that’s another story. Anyways, I believe they now have a gluten free version at BJs, but still I like to make my own so I know what’s really going into them. So I created my own! These are a little more light and less gooey than the ones at BJs but they are still amazing…especially with a side of ice-cream!


Preheat oven to 350 degrees F


2 cups almond flour
1 tsp baking soda
1/2 tsp salt
1 tsp vanilla extract
2 eggs
8 tbsp (1 stick) butter or ghee
1/3 cup maple syrup
1/2 -1 cup chocolate chips (depending on how much you like)


Mix all the dry ingredients together in a bowl

Melt the butter until almost all of it is liquid

Add eggs, maple syrup, vanilla  and melted butter to a large bowl and whisk until combined

Slowly add the dry mix to the wet and keep stirring

Add the chocolate chips and mix all together

Now grease a cast iron skillet with coconut oil

Spread the cookie batter into the cast iron and press it into the pan to make it even

Bake in oven for 25-30 minutes, until the top becomes golden
