Shamrock Spirulina Cookies

I had been trying to find all sorts of ways to make green cookies, like reacting sunflower butter with baking soda, green dye, avocado…. but nothing tasted good and green dye isn’t exactly good for you. Finally it came to me, Spirulina! These cookies are loaded with Spirulina powder and flax… you can practically call them breakfast food. So, yeah, I ate them with breakfast…



1 cup almond flour
1/2 cup flax meal
2 tbsp coconut flour
1/2 cup raisins
1/2 cup walnuts
1 tbsp Spirulina powder
1 tbsp cinnamon
1 tsp baking soda
1 tsp salt
1 stick unsalted butter
2 eggs
1/2 cup maple syrup
1 tsp vanilla extract


Preheat oven to 350 degrees Fahrenheit

Mix almond flour,  flax meal, coconut flour, Spirulina powder, cinnamon, baking soda and salt together in a large bowl

Melt butter until it is liquid, add maple syrup, eggs and vanilla. Mix until all are combined.

Add the dry ingredients to the wet ingredients slowly, while mixing.

Add in raisins and walnuts and stir

Drop by spoonfuls onto lined baking sheet and press down slightly with fingers or a fork.

Bake for about 12 minutes and enjoy!
